I'm looking for Central Market's whipped organic sweet potato receipe.?

Or one similar-it was really sweet and smooth and natural tasting.

5 pounds medium to large sweet potatoes
1 stick, 4 oz, unsalted butter, room temperature
1/2 tsp ground cardamom
salt and freshly ground white pepper
vegetable oil for frying
3/4 pound shallots, thinly sliced
Preheat oven to 400 degrees F. Pierce the sweet potato with the tip of knife and bake for about 40 minutes or until sweet potatoes are tender. Turn oven down to 250 degrees F.

Slit the skins and scoop the sweet potato into a large bowl. Add the butter and cardamom, and beat with an electric mixer at low speed until sweet potatoes are smooth and fluffy. Season the whipped potatoes with salt and pepper. Transfer the sweet potatoes to a serving dish and keep warm in the oven.

In a large deep skillet, heat 1 inch of vegetable oil until simmering. Add half of the shallots and fry them over moderate heat, stirring until they are crisp, 2 to 3 minutes. Using a slotted spoon, transfer the shallots to paper towels. Sprinkle the fried shallots with salt.

Repeat with the remaining shallots. Scatter the shallots over the whipped sweet potatoes and serve.
